Vegan no bake carrot cake energy bites from Woman’s Day
Forgive me today because I am extremely tired. My flight from Florida yesterday was supposed to get me into New York at 10 PM got me into New York at 12 AM due to thunderstorms. I ended up coming home at 1 AM. By the time I settle myself down it was after 2 AM and I was up again by seven. Today I’m not going to write a long blog, just going to give another vegan recipe.
**I have not tried this one yet, planning on making it later. Got this from Facebook from Women’s Day http://Www.womansday.com** I did make the recipe and they are chilling in the refrigerator.
CARROTS CAKE ENERGY BITES
Ingredients:
2 1/4 c. Quaker Oats (quick or old fashioned, uncooked) will use steel quick oats
2 c. finely shredded carrots
2 tsp. ground cinnamon oops forgot this, I love cinnamon too
1 c. finely chopped dates
2/3 c. Finely Chopped Almonds will use both raw and roasted here.
water
2/3 c. coconut flakes purchased unsweetened nothing added coconut flakes from Trader Joes.
Directions:
-Stir together first 5 ingredients. Add water, one tablespoon at a time, as needed for shaping consistency. I think I used about a cup of water in this step. It just wouldn’t make the shape with anything less.
-Form the dough into 24 heaping tablespoon-sized balls. Roll lightly in coconut flakes. I ended up with 31’balls which might be why I needed so much water.
-Refrigerate one hour before eating.
