Being Vegan and multiple sclerosis

Being Vegan and multiple sclerosis

May is my going to be my 6th month being vegan. I have had no problems being vegan other than salad dressing and my coffee. I prefer having a carb over a protein any day. How it relates to my multiple sclerosis is a different story: You can’t be vegan and not cook. This has been difficult because my hands fatigue easily making chopping, stirring and sautéing tiresome. The other issue is standing on my feet over the stove. I…

Forks over Knives Hippie Loaf

Forks over Knives Hippie Loaf

OK I have to start this post explaining that I was expecting this to be like my all hated veggie burger. https://multipleexperiences.org/2017/03/22/i-am-protesting-the-veggie-burger/.  I really been trying to find something other than my favorite soup that I still make every week.  https://multipleexperiences.org/2017/02/01/vegan-creamy-potato-curry-soup/  Or my no-tuna salad I eat all the time https://multipleexperiences.org/2017/03/16/forks-over-knives-vegan-no-tuna-salad-sandwich/ because a person can’t live off of 2 recipes and call it a day.  Anyway, for me the recipe was super easy. I just threw all the ingredients into my food processor and…

Forks over knives Tu-No Casserole

Forks over knives Tu-No Casserole

I made this recipe last night. Ate 2 bowls for dinner. I cooked it a little longer because I like it when then pasta gets crunchy on top. I used a full bag of brown rice pasta spirals instead of measuring out 1-1/2 cups and it was dry. I’d recommend using MORE milk and cashews for the sauce. I ended up adding a little Daiya, vegan cheese, on the top. It isn’t plant based that way but it wasnt much. Also…

7 benefits things I’ve discovered since becoming vegan

7 benefits things I’ve discovered since becoming vegan

I became vegan on December 2, 2016. I made the choice because I have multiple sclerosis. I am secondary progressive multiple sclerosis which means I continue to get worse slowly over time.  My symptoms vary and are more or less severe depending on the day, however it’s never great. I decided to go vegan to eat healthier, lower the inflammation in my body and to see if I’d feel any better. This is what I’ve found so far. You have…

Almond butter freezer fudge(vegan and non-vegan way)

Almond butter freezer fudge(vegan and non-vegan way)

This recipe came to me from my sister. I’m not sure what cookbook it is from. The original recipe calls for honey. HONEY IS NOT VEGAN. The reason why is because it is manufactured by farmed bees, bees are technically an animal. Bees make honey to feed the bee larvae. In a sense, similar to dairy. Not to mention on the social side, bees are often killed during the harvesting process. To make this recipe vegan substitute the honey for:…

I am protesting the Veggie Burger

I am protesting the Veggie Burger

The only thing I miss, being a vegetarian, is a really good hamburger. Maybe we could throw on some cheese and bacon with that. Slap on a little ketchup. Some really burnt french fries.  I mean if you’re going to go there, might as well go there right. I really don’t miss meat. I’ve had no problem giving it up. I’ve been a vegetarian now since December 2, and except for an occasional dairy product (like 1\2 & 1\2 in my coffee), I…

Forks over knives Vegan No-Tuna Salad Sandwich

Forks over knives Vegan No-Tuna Salad Sandwich

I have have a new favorite recipe. I’ve wanted to try this for a while and I finally whipped it together last night for dinner. First let me say, except for the Tahini, it was super easy. Yesterday was the first time I ever used Tahini. I ended up using my mini Cuisinart to mix it together, as instructed on the can. That was impossible to do. Is it supposed to be that difficult? The inside was hard and the top…

Butternut Squash Mac n Cheese Sauce and black cherry sauce

Butternut Squash Mac n Cheese Sauce and black cherry sauce

I know another recipe, but you have to understand… I don’t cook!!!! This is a really big deal for me.  I’ve become a cooking queen. Ok maybe not a queen but a really eager learner. I’m enjoying trying these new things being vegan.  I’m sure vegans out there have made recipes like this thousands of times. I haven’t really cooked in about 10 years. My not cooking had really nothing to do with my multiple sclerosis. Back then it wasn’t…
