Another one of those days, weeks, months with Multiple Sclerosis

Another one of those days, weeks, months with Multiple Sclerosis

Beautiful sunny day and I wake up with a headache. You know when you just haven’t felt right? That’s how I’ve been lately. I know, I know I have multiple sclerosis. Yes, that’s very true and the chances of it being just something with my multiple sclerosis is extremely high. However I just haven’t felt right. I’m not really sure what’s up. My doctor called with my blood work and again, everything is fine. I definitely don’t have Cushing’s, diabetes…

Becoming non-vegan

Becoming non-vegan

Everyone around me seemed to take a deep breath now that I’m not fully vegan anymore. On Thanksgiving I let a couple of things slide, but the only things I really added to my diet is fish, low-fat ground turkey and chicken. I pulled out all rice. I’m sticking to quinoa or bulgur or the lower calorie higher fiber grains as per weight watchers.  Other than that change, I’m still making my vegan recipes. I still try to keep the…

ranberry carrot cakeEven though I won’t be strictly vegan, I’ll never eat the way I used to. This recipe was just recently added to the Forks Over Knives app and it looked great. I’d rather have this cake though, yum… Cranberry Carrot Cake with Chocolate Ganache Ingredients 1⅛…

The vegan has left the building

The vegan has left the building

I gave it a good year but now I’m putting on weight and I have no idea why. I joined weight watchers and the first week I lost weight but then the last two weeks, I’ve gained. I track everything. I measure my portions. I even cut out sugar. I don’t get it. So I’m trying something new this week. I’m cutting out the carbs and seeing what happens. I know I sound crazy. I’ve been a vegan for a…

Somebody by Depeche Mode

Somebody by Depeche Mode

I didn’t make any new vegan recipes this week. I also gained weight at weight watchers. I don’t know how it’s possible but it happened. My veganism may be coming to an end…but so far I have not stopped. Anyway, thought I’d post a song. This was actually my wedding song. I had the wrong “somebody” but I still believe he’ll come along one day. Somebody by Depeche Mode I want somebody to share Share the rest of my life…

I’m a revised vegan

I’m a revised vegan

This will mark my 11 th month being vegan. December is my year anniversary. I went vegan for health reasons, not for the animal cruelty reason. HOWEVER, the only reason I didn’t go because of animal cruelty is because I could NEVER watch something like that and eat again and I know it. I love animals and if that makes me sound foolish or ignorant to the vegan world, I’m sorry.  Anyway, vegan opinions set aside, I made the rash…

Coconut Bean Sprout Curry-Plant Based on a Budget

I needed to try new recipes this week now that I joined weight watchers again. It is difficult to be vegan on weight watchers and staying fully vegan might come to an end, but that’s for another blog post. I do want to add I lost 2.6 pounds this week so I’m moving in the right direction. I feel better too. I needed to get back under control. I made this recipe this week putting it over some brown rice….

Being Vegan on Weight Watchers

Being Vegan on Weight Watchers

This is definitely been a new one for me. I probably have been on and off weight watchers since I’ve been about 10. There’s nothing I really don’t know about dieting, especially the weight watchers plans. However this one actually requires a lot of thought. The current plan, called smart points, is a protein-based plan. Meaning, lean meats are the lowest points.  Carbohydrates, even the whole-grain complex ones, a much higher points. The vegan diet, obviously, does not eat any meats….

Forks over Knives Harvest Moon Squash Soup

Forks over Knives Harvest Moon Squash Soup

I made this recipe and I have to be honest,I hated the taste with the sun dried tomatoes. However I learned a very handy tip when cooking. If food taste too acidic a sprinkle of baking powder can regulate the taste of any sauce or soup so you can save it. I made this a second time without the sun dried tomatoes and it was excellent. Have a wonderful fall Sunday. Harvest Moon Squash Soup Ingredients 1 medium butternut squash…
