Vegan black bean brownies

Vegan black bean brownies

First thing is this recipe was found on the Minimalist Baker website. http://minimalistbaker.com/vegan-gluten-free-black-bean-brownies/. Lots of fun recipes there to look around and try. For me to be on any kind of diet, or non diet, I have to have something to appeal to my sweet tooth. My favorite thing through Hungryroot was the black bean brownie mix but to ship just one or two of their products was expensive and buying a whole bunch of their products to get the free…

Vegan check in…

Vegan check in…

I’m only doing these “check ins” because I’m new to being vegan. I made for the first time the last few weeks a pasta dish that was delicious. The recipe is in this post.https://multipleexperiences.org/2017/02/09/forks-over-knives-vegan-chef-dels-mushroom-stroganoff/ My soup is still my favorite, it’s easy filling and so good.https://multipleexperiences.org/2017/02/01/vegan-creamy-potato-curry-soup/. I did run out of my almond milk/coconut milk that I whip together for my coffee a few times. That lead me to the half and half. I finally just bought Silk the non dairy…

Forks over Knives Vegan Chef Del’s Mushroom Stroganoff

Forks over Knives Vegan Chef Del’s Mushroom Stroganoff

Anyone that knows me knows I don’t cook. I just don’t like it but I know my way around the kitchen. As my multiple sclerosis worsened cooking became even more difficult. I have limited time I can stand on my feet, over a stove or cook top. I also have limited time I can cut and chop before my hands fatigue. Many times I will prepare a dish only to not be able to eat because my hands literally cannot…

Falling at home

Falling at home

I spent a lot of time hitting the floor yesterday and not by choice. Since becoming vegan I’ve had episodes of an unsettled belly. Ok I can understand that. However when you try to make a B-line to the ladies room with multiple sclerosis, doesn’t usually workout too well. The term run isn’t in my vocabulary of things I can do anymore and walking fast can cause other issues. HELP I’VE FALLEN AND I CAN’T GET UP!!!! I should be…

Super Bowl Sunday Vegan recipes

Super Bowl Sunday Vegan recipes

I have yet to master eating out or going to someone else’s home since becoming vegan. When I say master I really should say try. I’ve dined out maybe 3 times in the last 2 months and my meal consisted of a salad and a vegetable side. I normally try to eat something first so I am not that hungry when I go. When I’ve gone to a friends house I don’t eat there at all. Tonight is Super Bowl…

Vegan creamy potato curry soup

Vegan creamy potato curry soup

I had the best physical therapy session ever!!! Just one of those days where my legs were super strong and didn’t fatigue to the point I couldn’t walk, like they normally do.  I even had enough energy to get to the food store. I needed a few ingredients make my favorite soup.  Thought I’d do something different today and share a plant-based vegan soup recipe. I was just so happy how well today went I also had to share my…

Multiple Sclerosis check in since becoming vegan

Multiple Sclerosis check in since becoming vegan

Let me start by reiterating the reasons WHY I decided to become vegan. I was told by my sister and a friend about a movie Forks Over Knives. The movie is about how most, if not all, of the degenerative diseases that can afflict us can be controlled, or even reversed, by rejecting animal based and processed foods. There is also a book by Roy Swank called The Multiple Sclerosis Diet Book. In his book Dr. Swank also believed in…

Plant based diet week 3

Plant based diet week 3

I guess I can talk about my week review of my plant based diet eating. I told you my week in week two wasn’t the greatest week. I wasn’t exactly prepared. I ate a lot of meals from Veestro which were high in fat but it sticks to the plan. When I went away to my sisters for the holiday it actually was harder than I expected. Since we ate out two different nights, It was tough to be vegan….

My second week Vegan/plant-based

My second week Vegan/plant-based

First I’m happy to report I lost a pound. Second I still have no craving for meat. I’ve also been doing pretty good with my coffee. I haven’t really been missing my half and half with my coconut milk/almond milk blend. I use a brown sugar/truvia sugar blend in my coffee for a sweetener and it all flows nicely. I even throw in a cap of mirolax sometimes. I learned that Veestro who has those prepared plant based diet foods http://Www.veestro.com does…

My first week eating Vegan/plant-based diet…

My first week eating Vegan/plant-based diet…

It wasn’t difficult to not eat meat AT ALL. I didn’t miss it or crave it in the least. My most difficult obstacle was my coffee. Even being on weight watchers 99.9% of my life, I used half n half. I drank coffee very light. I had to give that up. Vegan is no dairy, no meat. I looked online and got a recipe for a can of coconut milk combined with almond milk, both unsweetened, mix them together and…
